Everything's Better With Bacon
What is not better with bacon? Nothing I tell you!
On Sundays we have bacon in it's purest form, roasted, with breakfast on the side.
Roasting bacon is an idea I ran across in Cooks Illustrated a number of years back. Basically you cook bacon on a rimmed cookie sheet in the oven. I loved the idea but resisted. Although it seemed super easy the spectre of a greasy oven put me off.
Finally. I roasted bacon one Sunday and have never gone back. Three things:

Finally. I roasted bacon one Sunday and have never gone back. Three things:
- The bacon cooks with very little attention, no flipping necessary.
- The bacon stays flat.
- NO messy oven!
- My rimmed sheet pan goes in the dishwasher for super easy clean up.
Okay, four things.
Seriously, you gotta try this! In a 350 degree oven roast the bacon for 10 minutes. Flip the pan and start checking after 5 minutes for your preferred level of doneness. If you're using thick cut bacon, add 5 minutes to each step.
Life with flat crispy bacon is bliss.
Tricky Duck Tip: Pour your bacon drippings over a paper towel in your garbage bowl for easy disposal. Or save them!
